Carrot truffles / Korenčkove kroglice

Hello September! Last year I was looking forward to Fall. This year… I haven’t decided yet =). Eh blah. My head will need some time to get accustomed to this fact. No, no, wait, I've already decided. I remembered that it’s okay to drink hot chocolate in the Fall. Fall, come, come, let me embrace you!

Before I write anything else, I have to express my gratitude. After my sponsors shared my last recipe- Homemade coconut milk on their Facebook page, I gained 500 new likes on my Facebook page (which is huge for me). I can honestly tell you I felt a little bit overwhelmed. Why? Because I'm super shy and would almost prefer to see that my blog is read by only 50 people. I know, I knooow, .. '’Oh yeah? So why do you even write this blog? "... Because I don’t want to allow my shyness to hold me back, THAT’S WHY =). From my heart, thank you.

I few weeks ago my poor old oven exploded. It’s true. I was baking potatoes and when I closed the oven, not even a minute later, glass on the oven door burst. I almost peed myself because it sounded as if something exploded, like a bomb. I still have no oven, so I’m not baking these days. I had this paper liners with owls at home and because I have no oven, I decided to use them for carrot truffles. They don’t contain flour, sugar and butter. These are so tasty! I once again proved to my boyfriend that carrot fits in desserts (like with that carrot cake). Seriously, we both immediately devour these.

Pozdravljen september! Lani sem se jeseni prav veselila, letos se glede tega še nisem odločila =). Eh bleh. Moja glava bo potrebovala nekaj časa, da se bo navadila. Ne, ne, sem se že odločila. Spomnila sem se, da bo sedaj vroča čokolada spet aktualna. Jesen, pridi, da te objamem!

Preden napišem karkoli drugega, se moram zahvaliti. Potem, ko je Trgovina popolna dekoracija (ki so moji sponzorji) na svoji Facebook strani delila mojo zadnjo objavo o domačem kokosovem mleku, sem v malo več kot enem dnevu dobila 500 novih všečkov na Fb-ju (kar je zame veliko). Iskreno povem, da me je ob temu kar malo stiskalo pri srcu. Zakaj? Ker sem super sramežljiva in bi zaradi tega raje videla, da bi moj blog bralo samo 50 ljudi. Vem, veeem, .. ''Ja zakaj pa potem sploh pišeš blog?''… ker nočem, da bi me to oviralo, ZATO =). Iz srca, hvala vsem.

Zadnjič je mojo ubogo staro pečico razgnalo. Res. Pekla sem krompir in ko sem pečico zaprla, je čez manj kot minuto steklo na vratih pečice počilo in ga vrglo naokrog. Skoraj sem se polu***, ker je zvenelo tako, kot da bi nekaj eksplodiralo. Še vedno sem brez pečice, torej zadnje čase ne pečem.  Doma sem imela te papirčke za mini tortice s sovicami in ker nimam pečice, sem jih raje napolnila s korenčkovimi kroglicami. Ne vsebujejo moke, sladkorja in masla. Hudičevo so dobre! Svojemu fantu sem ponovno dokazala, da korenje paše v sladice (tako, kot pri korenčkovi torti). Resno, oba sva jih takoj zmazala.

Recipe adapted from: Once upon a cutting board

The Recipe

Ingredients

1-1/2 cups large-flake rolled oats
1/2 cup chopped almonds
1/4 teaspoon sea salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
12 medjool dates, pits removed, chopped into pieces
1 cup grated carrot (about 2 large carrots)
1/2 teaspoon pure vanilla extract

Optional: 250g chocolate (dark/vegan if you want these to be healthy) / unsweetened shredded coconut

The process

Add oats, almonds, salt, cinnamon, nutmeg, and ginger to the large bowl of a food processor.  Process until the mixture resembles fine crumbs.  Remove from food processor and set aside in a bowl.

Add dates to the food processor and mix until smooth.  Add 1 tablespoon or more of water to help them blend.  Add the carrots, vanilla, and oat mixture back to the food processor and pulse everything until combined and sticking together.  Taste mixture and add more spices or carrots if desired.

Remove mixture from food processor and roll into balls.  Keep covered in refrigerator and let refrigerate for at least a couple hours before eating for better texture.

Options:
You can melt chocolate and roll these in chocolate, then put them on a plate after lining it with baking paper. Place them in the refrigerator for one hour. Another option is to roll the balls in shredded coconut if you like.
Sestavine

135g ovsenih kosmičev
72g mandljev
1/4 čajne žličke soli
1/2 žličke cimeta
1/4 žličke muškatnega oreščka
1/4 čajne žličke mletega ingverja
12 datljev
90 naribanega korenja
1/2 žličke čistega ekstrakta vanilije

Neobvezno: 250g čokolade (temne / veganske, če želite, da bodo kroglice zdrave) / kokosova moka

Postopek 

V multipraktiku zmeljite ovsene kosmiče, mandlje, sol, cimet, muškatni orešček in ingver. Dobro zmleto mešanico  vsujte v drugo posodo.

V multipraktiku zmeljite narezane datlje. Dodajte žlico (ali več) vode, da se bodo lažje zmleli. Dodajte naribano korenje, vanilijin ekstrakt in že prej zmleto mešanico z ovsenimi kosmiči, vse skupaj dobro zmeljite, da dobite lepljivo zmes. Poskusite in dodajte še več začimb ali korenja, če je to potrebno.

Z rokami oblikujte kroglice in jih za nekaj ur postavite v hladilnik (za boljšo teksturo), če se boste odločili, da jih boste pustili take.

Neobvezno: 
Če ste se odločili, da jih boste oblili s čokolado: nad vrelo vodo v drugi posodi stopite čokolado, v stopljeni čokoladi povaljajte kroglice in jih položite na krožnik, na katerega ste položili peki papir. Za eno uro jih postavite v hladilnik, da se čokolada strdi. Druga opcija: kroglice povaljajte v kokosovi moki.
