Homemade coconut milk / Domace kokosovo mleko

If I look up, I see a white wardrobe, white wall, photo on the wall in a white frame, white chair, white orchid, white pillow and my body is stretching a white T-shirt. Prior to that I drank white drink and Christ, when will be the end of this ‘all white movement’ ?? No, I'm not complaining. I became aware of all this whiteness because of that aforementioned white drink. Homemade coconut milk.

Coconut is number one to me in everything and I wish that I could buy coconut water and coconut milk everyday. I don’t buy these often, due to the price and that is why I decided to make my own coconut milk, because this mama is fed up with coconut abstinence!

Če dvignem pogled, vidim belo omaro, belo steno, fotografijo na steni v belem okvirju, bel stol, belo orhidejo, belo blazino in moje telo razteguje belo majico. Pred tem sem spila belo tekočino in Kristus, a še ne bo konec te beline?? Ne, saj se ne pritožujem.  Na vso to belino sem postala pozorna zaradi tiste prej omenjene bele tekočine. Domače kokosovo mleko.

Kokos je zame številka ena glede vsega in želim si, da bi kokosovo vodo in kokosovo mleko prodajali po nižji ceni. Zaradi cene ju ne kupim pogosto in ravno zato sem se lotila priprave domačega kokosovega mleka, ker ima tale mama dovolj kokosne abstinence!

The Recipe

Ingredients 
1 cup unsweetened shredded coconut
2 cups of hot water (not boiling)
sweetener, vanilla (Optional)

The process
Pour water into blender and add coconut.

Soak the shredded coconut in the water for about 1 hour.

Blend the coconut and water mixture in a blender for a minute or two (at this stage add the sweetener or vanilla, if you are opting for a more sweet coconut milk).

Meanwhile, prepare a cheesecloth or white cotton towel and a bowl.  Pour the mixture into the cloth, and strain.

Coconut milk can be stored in the refrigerator for 2-3 days. You can freeze it in ice cubes trays.  Dry that leftover grated coconut, you can use it in porridge, cookies, cakes,…
Sestavine
200g posušenega naribanega kokosa (nesladkanega)
3 dcl vroče vode (ne vrele)
sladilo, vanilija (po želji)

Postopek
Vodo prelijte v blender in ji dodajte kokos.

Kokos naj se 1 uro namaka.

Blendajte par minut (v tej fazi dodajte tudi sladilo ali vanilijo, če ste odločili za bolj sladko kokosovo mleko).

Zmes precedite skozi gazo, krpo ali zelo drobno cedilo. Gazo dobro stisnite ali si pomagajte z žlico, če uporabljate cedilo.

Kokosovo mleko lahko hranite v hladilniku 2-3 dni. Lahko ga zmrznete v obliki ledenih kock, da ga boste imeli kdaj kasneje pri roki. Nariban kokos, ki je ostal, lahko posušite in uporabite pri kašah, piškotih, kolačih,…

Fitness bread & Spread with sardines and curd / Fitnes kruh & Skutin namaz s sardelami + Giveaway (Slovenia only)

Two wonderful people are to blame for this post. My sister and her boyfriend are eating healthy for quite some time now. When they threw all that fattening food out of their pantry I, of course, sacrificed and took all the chocolate and grissini.

Instead of the usual bread they often bake this lovely bread in the photos. I am just going to call it a fitness bread, because it is full of protein (if it bothers you that a recipe contains so many eggs, then this bread will not be for you) and good fats. What about something to spread on this bread=)? In order not to spoil everything by spreading Nutella on it, I threw together a couple of good ingredients and made a bread spread.

Dva čudovita človeka sta kriva za tole objavo. Moja sestra in njen fant sta kar konkretno spremenila način prehranjevanja. Ko sta iz shrambe izločila vse kar redi, sem se seveda žrtvovala in sprejela vse čokolade ter grisine.

Namesto običajnega kruha pogosto pečeta tega, ki ga vidite na fotografijah. Sama sem ga poimenovala kar fitnes kruh, ker je poln beljakovin (če vas moti, da je toliko jajc v receptu, potem ta kruh ne bo za vas) in kvalitetnih maščob. Kaj pa kaj za namazat na kruh=)? Da ne bi vsega pokvarila z mazanjem Nutelle nanj, sem skupaj vrgla nekaj neškodljivih sestavin in jih spasirala.

The Recipe

Bread 

Ingredients 
200g of ground flax seed (flax seed meal/flour)
40g grated Parmesan cheese
1 teaspoon salt
1 teaspoon coconut sugar
½ teaspoon of baking powder
2 whole eggs
4 egg whites
5 tablespoons olive oil
1dcl lukewarm water

The process
In a bowl mix a ground flax seed, Parmesan, salt, coconut sugar and baking powder. Then make a hole in the middle into which you put the eggs, egg whites, olive oil and mix it all together, then add lukewarm water and mix it again. Wait 5 minutes and then stir everything again.   Pour the mixture in greased baking dish (or better yet, use baking paper). Bake in an oven, 1 hour at 200 ° C.

Spread

Ingredients 
1 can of sardines (canned in their own juice, not oil)
1 eggplant
300g curd
Fresh or dried basil

The process
Cut eggplant into cubes, season it with salt and wait for 15 minutes (eggplant will release water), then pat the cubes dry with paper towels and then fry them in a pan. Process cottage cheese, sardines and fried eggplant until smooth. Season it with fresh / dried basil.

Kruh

Sestavine
200g zmletega lanenega semena (fino mleto, kot moka)
40g naribanega parmezana
1 čajna žlička soli
1 čajna žlička kokosovega sladkorja
½ žličke pecilnega praška
2 celi jajci
4 beljaki
5 žlic olivnega olja
1dcl mlačne vode

Postopek
V posodi zmešaš zmleto laneno seme, parmezan, sol, kokosov sladkor in pecilni prašek. Nato na sredini narediš jamico, v katero daš jajci, beljake, olivno olje in vse skupaj dobro premešaš ter dodaš mlačno vodo in ponovno premešaš. Počakaš 5 min in nato maso še enkrat premešaš in jo preložiš v pomaščen pekač (ali še bolje, uporabiš peki papir). Pečeš v pečici, 1 uro pri 200°C.

Namaz

Sestavine
1 konzerva sardin v lastnem soku
1 jajčevec
300g skute
Sveža ali sušena bazilika

Postopek
Jajčevec narežite na koščke, posolite in pustite stati 15min, da spusti vodo,koščke potapkajte  s papirnatimi brisačkami ter jih popecite v ponvi. Skupaj spasirajte skuto, sardine in pečen jajčevec. Začinite s svežo/sušeno baziliko.
