Healthy recipe: Vegan whole wheat blueberry pancakes / Veganske palacinke z borovnicami


Unmade bed, hydrangea in a vintage white vase, cappuccino with too much sugar in a cup bought in  Amsterdam, the sound of traffic in the distance, messy hair, glasses, curtains waving in the summer breeze, touch of the sun, pink nightdress, a mess ... a mess everywhere, dirty dishes in the sink,  thoughts of yesterday's day, this is a day off .... oooooh, it feels nice.

Pancakes for breakfast ... lunch ... dinner .. I think it could work. Despite the fact that there are billions of desserts out there, nothing outperforms the good old pancakes that give you a feeling of warmth, reminds you of  childhood, blow off a bad day, they make you to hug a person who prepared them for you, because you're so happy .. . pancakes on a Sunday summer morning on the balcony .. .. with family ... Pancakes on Friday evening, with your boyfriend or girlfriend, with loads of Nutella, while watching a movie, pancakes with friends in the pancake's party ... Maybe I feel too much love for pancakes =). I also love  American pancakes with maple syrup, ice cream, banana, jam ...

I wanted to try a slightly different recipe ... American vegan pancakes. Okay, to be honest, white flour gives me more pleasure than a whole grain flour, but .... I can not have everything every day =).

Ingredients
2 cups whole wheat pastry flour 
2 teaspoons baking powder 
1 teaspoon ground cinnamon 
 1/4 teaspoon fine sea salt 
1 cup unsweetened almondmilk, soymilk or ricemilk 
1/2 cup water 
2 tablespoons sugar
1 teaspoon pure vanilla extract 
1 1/4 cup fresh or frozen blueberries


The process
In a large bowl, whisk together flour, baking powder, cinnamon and salt. In a separate medium bowl, whisk together almondmilk, 1/2 cup water, sugar and vanilla until blended. Pour milk mixture into flour mixture and stir until evenly mixed. Set batter aside to rest for 10 minutes (the batter will be very thick).

Oil a cast-iron griddle or large nonstick skillet with canola spray oil and heat over medium heat until hot. Stir blueberries into batter. Ladle about 1/4 cup batter onto griddle and cook about 2 minutes or until bottoms are golden. Flip and cook 1 to 2 minutes longer, until pancakes are cooked through.




Razmetana postelja, hortenzije v beli vintage vazi, kapučino s preveliko količino sladkorja v skodelici iz Amsterdama, zvok prometa v daljavi, razmršeni lasje, očala, počasno valovanje zaves, dotik sonca, roza spalna srajca, nered... povsod nered, nepomita posoda, misli o včerajšnjem dnevu,  to je frej dan.... ahhh, kako paše. 

Palačinke za zajtrk...kosilo..večerjo...mislim, da bi to šlo. Kljub temu, da obstaja na milijarde sladic, nič ne prekosi dobrih, starih palačink, ki ti dajo občutek topline, te spomnijo na otroštvo, odpihnejo slab dan, povzročijo, da objameš osebo, ki ti jih je naredila, ker si tako vesel...palačinke na nedeljsko poletno jutro..na balkonu..z družino... palačinke na petek zvečer, z ljubeznijo, ob filmu in z goro Nutelle, palačinke s prijatelji, na palačinka žuru... mogoče jih imam preveč rada =). Super so tudi ameriške palačinke, z javorjevim sirupom, sladoledom, banano, smetano, marmelado...

Želela sem poskusiti malce drugačen recept... veganske ameriške palačinke. Okej, če sem iskrena, me bela moka spravi v boljšo voljo kot polnozrnata, ampak....ne morem imeti vsega vsak dan =).

Sestavine
260g polnozrnate moke 
2 žlički pecilnega praška
1 žlička mletega cimeta
1/4 žličke soli
250ml riževega mleka/ovsenega/sojinega...
125ml vode
2 žlici sladkorja
1 žlička ekstrakta vanilije/vanilijev sladkor
250g borovnic


Postopek
V veliki skledi zmešajte skupaj moko, pecilni prašek, cimet in sol. V drugi skledi zmešajte skupaj mleko, vodo, sladkor in vanilijev ekstrakt. Mlečno mešanico zlijemo v prvo mešanico in dobro premešamo skupaj vse sestavine. Maso pustimo 10 min, da se še malo bolj zgosti.

V maso vmešamo borovnice. Pristavimo ponev na srednje močan ogenj, dodamo izbrano maščobo (kokosovo mast/repično olje....). Z zajemalko vlijemo maso, pečemo na vsaki strani 2min, oziroma do zlate barve.

Healthy recipe: Grilled Peach Salad with Buffalo Mozzarella and Arugula / Solata s pecenimi breskvami, mocarelo in rukolo


Ahoooooy! OOOOOooo how beautiful it is to post something new!  Thanks to all of you, that clicked on my blog during this time, even though  it's been a loooong, long time since I posted anything new... maybe you hoped I posted something new or you might found  something suitable in my previous posts ... either way I'm totally surprised that I kept all Google subscribers . . I would not be at all surprised if you all fled. . . . uuu naughty Neja she's not posting anymore! Despite the fact that I didn't write, I read other blogs. Blog obsession!

During this time of silence I wasn't cliff diving, hunting kangaroos, baking macarons, camping in the woods, talking all day in fake accent, having a picnic in a tree, making a funny YouTube video, dancing around  bonfire on the beach, tattooed half of my ass,  hithikching in  Belgium and dranking a liter of beer all at once...no, I haven't done all that. . hmmm, it sounds like a great summer, which I would be always happy to remember and at the same time roll under the table while laughing hysterically, yes,  because I like to do that, I like to  roll under the table. . . laughing. Instead of all these crazy cool things I have passed all my exams (wooo-hooo, oh yeah, oh yeah, give me some!) and I'm currently in the middle of the traineeship. . . and I can not wait to start writing master's thesis! Well, not really, but I have to somehow motivate myself ;).

Who likes to cook in this heat? Me . . . .not really! Wanna try a little different salad? Sweet & sour? The next time you have a BBQ, throw some peaches on that grill next to those burgers;).

Ingredients

peaches, cut in half and pitted (one per person)
salt
2  large handfuls arugula, washed and dried
3 large handfuls lettuce, washed and dried
1 small red onion, slivered
5 oz. buffalo mozarella or other fresh mozzarella, torn into bite-size pieces
4 Tbs. white balsamic vinegar
2 tsp. honey
2 tsp. dijon or whole grain mustard
2 Tbs. minced chives
1/3 c. olive oil



The process
Lightly salt the cut sides of the peaches, drizzle very lightly with olive oil and place cut side down on the grill (or pan).  When the peaches are charred and just beginning to soften, remove them to a platter and set aside.  
Make the dressing: place vinegar, honey, mustard and chives in a small bowl.  While whisking constantly, slowly drizzle in olive oil until emulsified. 

 Toss arugula, lettuce and onion with vinaigrette and place on serving platter or dish.  Nestle peaches and mozzarella amongst greens and drizzle with a little more dressing.  Sprinkle with coarse sea salt and serve.



Ahoooooj! UUU, kako lepo je spet objaviti zapis. Hvala vsem, ki ste kljub temu, da že doooolgo, dolgo nisem objavila ničesar novega, vseeno klikali...morda ste upali, da je kaj novega, morda ste med prejšnjimi objavami  našli kaj ustreznega... kakorkoli, totalno presenečena sem, da sem ohranila vse Google spremljevalce. . .sploh se ne bi čudila, če bi kar vsi pobegnili . . . . uuu poredna Neja niiiič ne objavlja!! Kljub temu, da sama nisem pisala, sem brala druge bloge. Blog obsesija!

Med tem časom tišine nisem skakala s pečin, lovila kengurujev, pekla makronov, kampirala sredi  gozda, cel dan govorila s fake naglasom, imela piknik na drevesu, naredila smešen  YouTube video, plesala okoli ognja na plaži, si dala potetovirati pol riti, štopala v Belgiji in spila liter piva na eks, nič od tega nisem počela . . . hmmm, zveni pa kot super poletje, ki bi se ga vedno z veseljem spominjala in se zraven od smeha valjala pod mizo, ker to rada počnem, da, rada se valjam pod mizo . . . od smeha.  Namesto vseh teh luštnih stvari, sem naredila vse izpite (wuuu-huuu) in trenutno sem sredi opravljanja prakse . .  . in komaj čakam, da potem začnem pisati magistrsko nalogo!!  No, niti ne, ampak moram se nekako motivirati ;). 

Komu se da kuhati v tej vročini? Meni. . . niti ne! Ste za malo drugačno solato? Sladko & kislo? Naslednjič, ko boste imeli piknik, vrzite na žar poleg pleskavic še kakšno breskev ;).

Sestavine
breskve, izkoščičite in prerežite na polovice (ena breskev na osebo)
sol
rukola
berivka
1 mala rdeča čebula, narezana
150g buffalo mozarella ali druga mozzarella, raztrgana na grižljaj velike koščke
4 žlice balzamičnega kisa
2 žlički medu
2 žlički Dijon gorčice (ali navadne gorčice)
2 žlici mletega drobnjaka
50ml olivnega olja


Postopek
Rahlo posolimo odrezane robove breskev, pokapajte z olivnim oljem in jih z odrezano stranjo položite na žar ali ponev. Ko so zmehčane, jih položimo na krožnik.

Naredite preliv: v majhni skledi združite kis, med, gorčico in drobnjak. Dodajte olivno olje in dobro zmešajte vse sestavine.

Rukolo, berivko in čebulo pokapajte s prelivom,  zmešajte ter položite na krožnik. Na vrhu položite breskve in mozzarello ter dodatno pokapajte s prelivom, potresite z morsko soljo in postrezite.
