Vegan Chocolate Muffins (no sugar)



Stephen King's book, John Grisham's book, pills, one toilet paper roll, a window shelf full of snotty toilet paper, an empty teacup, no make that two empty teacups... ahhh the mess that surrounds me is the result of a cold that put me to bed.

I just watched the movie A star is born. Some woman asshole on YouTube ruined it for me, because she revealed the ending and it wasn't that type of video where you would expect to hear something like this. That's just the worst. It was okay, a little bit corny and heavy at the same time. I'm not into sad movies anymore. They drain me too much. You know the empathy rule? Don't watch sad movies if you're an empath. I just made it up. You will cry 100 %. So, watch happy movies instead. Simple.

If you live alone, then you know what a drag it is to get sick. It took me forever to wash the dishes. I managed to bake bread because I'm definitely not able to go to the grocery store. Superwoman right here, signing off.


Recipe from: The pancake princess

The Recipe

Ingredients

1.5 cups dates, chopped and pitted (265 g)
1 cup water (235 ml)
¾ teaspoon baking soda
¾ cup whole wheat flour (85 g)
½ cup oat flour (45 g)
¼ cup unsweetened cocoa powder (not Dutch-process) (30 g)
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon vanilla
½ cup almond milk (120 ml)
2 large, very ripe bananas, mashed
2 tablespoons oil
1.5 tablespoons peanut butter (or other nut butter)
1/4 cup chocolate chips (optional <--this adds sugar) (45 g)

Instructions

Preheat oven to 350 degrees F (I set it to 150°C) and line a muffin tray with paper muffin cases.

Place the dates and water in a small saucepan, uncovered, over high heat. As soon as the mixture comes to a boil, add the baking soda. Mixture will foam up; reduce the heat to medium or medium high if mixture starts to foam over. After a minute or two, the dates should begin to break down. Use a wooden spoon to stir/mash up the dates a little. Let simmer for another five minutes or so until the dates break down into a paste-like mixture. Add an additional splash of water if the mixture starts to look dry before the dates have completely broken down. Once dates are a stir-able mass, set aside to cool.

In a large bowl, combine the flours, cocoa, baking soda, baking powder and salt. Add the date paste, vanilla, milk, bananas, oil and peanut butter and stir until well combined. Do not overmix. Fold in chocolate chips.

Place about a heaping tablespoon of batter into each muffin case well. Bake for 12-13 minutes for muffins. Muffins are done when the tops feel firm to the touch.
