Sweet Potato Toast



Do you know what happiness feels like? 

I always wondered, when I was miserable, what does happiness feel like. And now I know the answer to this question. You feel so elated and calm at the same time. You feel like you have bees in your feet.

Honestly, I'm buzzing.



The Recipe

INGREDIENTS

sweet potatoes
peanut butter
avocado
black sesame seeds
tomatoes
apple
banana
chocolate
walnuts

Options:
humus, any fruit and vegetables, nuts, butter nuts, Smoked salmon, Bacon, cinnamon ...

INSTRUCTIONS

Wash your sweet potato.

Pre-heat oven to 200°C (400°F).

Cut sweet potato lengthwise into thin slices, about 6 mm (1/4″) thick. 

Coat sweet potato slices with a small amount of oil. Season with salt and pepper and place on a baking sheet with a little room between each slice.

Bake for about 15-20 minutes, flip slices over and bake for another 15-20 minutes or until a fork can easily pierce the sweet potato. Don’t overcook or the sweet potato toast will become mushy.

Remove from oven and top with your toppings of choice.

I topped my first slice with peanut butter, apple slices and walnuts, second slice with peanut butter, banana slices and shaved chocolate, the third one with avocado slices and black sesame seeds, forth slice with mashed avocado and tomato slices.
