Gluten-free banana bread



Do you know what I don't like?

I don't like having nightmares about people who are no longer in my life. Lately, I've been dreaming almost every week about someone who hurt me. And I'm wondering why. Because I believe that everything happens for a reason, that everything is a lesson and I believe in signs. So, I don't know why am I dreaming about this person, why are these dreams always traumatic and what is the universe trying to tell me. Oh man, just stop torturing me already.

On a lighter note, this gluten-free banana bread is a result of my cupboard cleanse. It's delightful. I am going to use a word that the majority of Americans hate the most - it's moist. It's moist, sweet and light. You can substitute sugar for something healthy. Enjoy!

The Recipe

Ingredients

A
2 medium Banana
80 grams Sugar
60 grams  oil
70 ml Water

B
130 grams Rice flour
30 grams Cornstarch
1/2 tbsp Baking powder

Steps

Mash the banana with a fork. Preheat the oven to 180°C.

Add the A ingredients to a bowl in order from the top. Use a whisk to combine.

Add the B ingredients into the bowl. Mix together well and then pour in the pan. Bake for 30-40 minutes.
